BAKING: Banana Nutella Muffins

I teased you all with some images on our instagram feed Monday as we baked these ooey gooey delights, it’s only right I come through with the recipe — and in a timely manner of course, 48 hours, I think that’s petty good, no?!

You see, we’ve spent many-oh-days at my parents house over the last 5 weeks with only one thing in mind, DIRTY LAUNDRY. Since starting our renovations we’ve been without our washer and dryer and every mother knows that laundry with a babe accumulates quickly. I hit my mama and papa up for their laundry services at least once a week but more than often twice. We make a day of it, spend it with nana, playing, watching movies or in this weeks case, baking; all while I wash, scrub, bleach, dry, hang and blogs. productive I’d say.

…we owe you one mum and dad! Literally a jug of liquid tide and half your water bill!

We were forced to make muffins after Sofia caught another episode of Emily Yeung — I really should know by now, TV must be off before that adorable kid graces our screen. Last week she had me making bread and now this week muffins… why I outta!!!

Banana Nutella Muffins {original recipe via if you give a blonde a kitchen}

INGREDIENTS

  • 2 cups Flour
  • 1/2 cup Sugar
  • 1/4 cup Brown Sugar | packed
  • 3/4 tsp Baking Soda
  • 1/2 tsp Salt
  • 3 Bananas | ripe, mashed
  • 1/4 cup Greek Yogurt
  • 2 Eggs | lightly beaten
  • 6 tbsp Butter | melted
  • 1 tbsp Vanilla
  • Nutella

METHOD

  1. Bring over to a temperature of 350° F and line muffin pans with liners.
  2. In a large bowl, mix together flour, both sugars, baking soda and salt. Leave for later.
  3. In another bowl, this time medium, mix mashed bananas, greek yogurt, eggs, butter and vanilla. Mix everything until well blended and smooth.
  4. Now, gently fold banana mixture into dry ingredients, just until combined. The batter will look thick — do not over-mix! I repeat DO NOT OVER-MIX.
  5. Fill 12 muffin cups and pipe a dollop of Nutella on top of each muffin. Now using a chopstick, mix ‘er in.
  6. Bake for 25 minutes or until golden.
