I have found that more so now than ever, as a blogger, I have met the most extraordinary people. I have connected and created friendships with individuals I may never have had the pleasure of meeting and I am thankful each and everyday for this. I met Amy when we were both in the running for Top Mama Blogger in Vancouver earlier this year. We hit it off instantly with silly comments about home renovations and “did you have any idea” conversations about first time motherhood moments. When it’s cold, wet and dark outside, I crave comfort food. Something warm, tasty and delicious. These scones are just that. Sometimes I’ll have it with a warm bowl of chili or I’ll enjoy it with a hot cup of tea and some solitary time after the little girl is in bed. I suggest doubling this recipe because they are so good you could eat them as a meal.
INGREDIENTS
2 cups Flour
4 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
4 tbsp White Sugar
1/2 cup Cold Margarine or Butter
1/2 cup Sour Cream
1/2 cup Milk
1 1/2 cup grated Cheese or as desired
METHOD
1. Combine flour, baking powder, baking soda, salt and sugar.
2. Cut in butter using a pastry blender or 2 knifes.
3. Add grated cheese, mix well.
4. In separate bowl, combine milk and sour cream.
5. Add milk with the fork and then knead with your hands.
6.Turn scone mix onto floured work top and roll to about 2cm thick. Cut into circles of wedges.
7. Bake on cookie sheets @ 425 for 12 minutes.
