You know what I love about mornings, their are 2 things. The first is the face of my baby girl when she first wakes. So sleepy but full of smiles and energy. Second is Breakfast. I love food and well, lets be honest, food loves me a little too much. This is why I strive to find healthy meal options, for the knowing and understanding, that I will over indulge. The guilt won’t lay so heavy on my shoulders {and hips, tummy and thighs} when I know it was a healthy overdose.
These Oat Pancakes are just divine lovelies, just pure breakfast bliss. A fabulous take on the traditional Pancake, with a healthy spin. Made with loads of protein these Oat Pancakes will no doubt give you a little extra ‘pep’ in your ‘step’. I know you’ll just love them as much as I do.
INGREDIENTS
6 Egg Whites
1 cup Rolled Oats
1 cup Cottage Cheese
2 tsp Brown Sugar
1 tsp Cinnamon
1 tsp Vanilla
METHOD
Blend all ingredients until smooth, in a blender.
Heat a pan or griddle over medium-low heat, that has been sprayed with cooking spray.
Pour 1/4 cup of batter onto pan for one Pancake, flip when its bubbles start to pop.
Cook until golden brown.
Makes 10 Pancakes | 1 Weight Watchers Point per Pancake

Love this! especially using oats (not only because its all I can use right now …hehe) but who needs pancake batter?!? ill take the healthy fats instead!!
