Blackened Chicken, Cilantro Quinoa with Avocado Cream Sauce


This entire meal was absolutely amazing, I can’t even begin to tell you…. but of course I’ll try. 
The Blackened Chicken had just the perfect amount of heat, giving the Avocado Cream Sauce time to cool you down. The Cilantro Quinoa was the perfect part savory and citric that It almost put me into a trance…. just divine! I ate enough to satify, but let me tell you I could have ate the entire amount made for Sammy and I. Oh man! Dangerous! Luckly its quite healthy considering all the ingredients. I love a good healthy meal that leaves you full but not stuffed. The Blackened Chicken with Avocado Cream Sauce served with Cilantro Quinoa is just that. A match made in Foodie Heaven


INGREDIENTS

Blackened Chicken

2 Boneless Skinless Chicken Breasts
½ tsp Paprika
¼ tsp Salt
¼ tsp Pepper
¼ tsp Cayenne Pepper
¼ tsp Onion Powder
¼ tsp Cumin


Cilantro Quinoa
2 Cups Chicken Stock
1 Cup Quinoa
2 Limes | Juice and Zest
Salt and Pepper
2 tbsp Cilantro | chopped

Avocado Cream Sauce

1 Avocado
1/2 Cup Greek Yogurt
1 Lemon
2 tbsp Milk

METHOD

Combine all dry seasonings in a small bowl. Season both sides of Chicken Breasts.
BBQ Chicken or Pan Fry until cooked.
Place Chicken Stock and Quinoa in a medium sauce pan. 
Bring to a simmer. Reduce the heat to low, cover, and cook for 15 minutes.
Once cooked, add the warm Quinoa to a bowl, toss in the Lime Juice and Zest along with chopped Cilantro. 

Blend together Avocado, Greek Yogurt, Lemon Juice and Milk until smooth.

Serve Chicken on top of Quinoa and top the Blackened Chicken with your Avocado Cream Sauce.
