Easter Crinkle Cookies

Looking for a festive cookie? How about an easy cookie? Wait… what about an ridiculously tasty cookie?

Well however you look at it, I’ve got you covered. Found this super simple cookie recipe thanks to a pinner on pinterest, and I changed the recipe from adding “green coloring” for St. Paddy’s Day to adding “red coloring” to make a pink cookie for Easter. They are beyond simple, extremely yummy, and well I don’t know what is more Easter-esk than a pink cookie? Okay maybe a bunny or chick shaped cookie, but you get the point. They are pink, and this screams Spring… Easter… Bunny… FUN!

Easter Crinkle Cookies

1 Boxed White Cake Mix 
6 Tbsp Butter | melted
2 Eggs
Red Food Coloring
1 Cup Powdered Sugar
1 tsp Corn Starch

Preheat the oven to 375°
Melt the Butter in the microwave, and allow to cool while you prepare the sugary concoction.
In a shallow dish or bowl, mix together your Powdered Sugar and Cornstarch.
With your mixer, mix together the melted Butter, Cake Mix and Eggs.
Slowly add in your Red Food Coloring, 5 drops at a time until you get your desired color.
Form your cookies into 1 tablespoon sized balls {don’t make them any bigger, trust me}
Roll each ball in your palms to get them just right, then roll them in your Powdered Sugar mix, coating them well.
Arrange your cookies on a baking sheet lined with parchment paper
Bake for 9 minutes, remove from oven, even if they look raw, they harden up after a few minutes out, and leave a chewy-like texture.
Allow to cool on the baking sheet for one minute, then move to cooling rack.
